Souper Tuesday
Souper Tuesdays have kicked off and are proving a hit once again. A warm cup of soup on a cool day is enjoyed by many. Recipes so far this year, Mrs. Gleeson’s pumpkin soup and Broccoli and Potato soup.

Mrs. Gleeson’s Pumpkin Soup (3 May)
750g pumpkin
250g sweet potato
250g potato
2 large onions
1L veg stock
1 cup cream
2 tsp curry powder
salt & pepper
In large saucepan heat 1-2 tbs oil and fry sliced onions and curry powder. Peel pumpkin and potatoes and cut in to small pieces, add all to pot along with stock.
Bring to boil, reduce heat and simmer, uncovered for 30 minutes or until tender.
Blend and add cream, salt and pepper to taste and simmer for a further 5 minutes.
Broccoli and Potato Soup (10 May)
400gm Broccoli, roughly chopped
500gm Potato, peeled and chopped
1 Litre vegetable stock
2 tbs sour cream
Place broccoli, potato and stock in large pot and bring to the boil.
Simmer for 30 minutes or until tender.
Blend, add sour cream and serve.
Add salt and pepper if desired.
