Souper Tuesday
Potato and Leek Soup
2 leeks, washed and thinly sliced
4 medium potatoes, peeled and diced
1 garlic clove, crushed
1 brown onion, roughly chopped
1 tbs olive oil
1.25L vegetable stock
100ml cream
Fry onion and garlic in oil over medium heat until soft.
Add leek and potato and continue to cook until leek softens.
Add stock and bring to boil. Reduce heat and simmer for 25 minutes or until potato is soft.
Blend, add cream and serve - with croutons if desired.
Mrs Gleeson’s Pumpkin Soup
750g pumpkin
250g sweet potato
250g potato
2 large onions
1L veg stock
1 cup cream
2 tsp curry powder
salt & pepper
In large saucepan heat 1-2 tbs oil and fry sliced onions and curry powder. Peel pumpkin and potatoes and cut in to small pieces, add all to pot along with stock.
Bring to boil, reduce heat and simmer, uncovered for 30 minutes or until tender.
Blend and add cream, salt and pepper to taste and simmer for a further 5 minutes.
