Soupa Wednesday is back!!!

Today's soup

Mrs Gleeson’s Pumpkin Soup 
 
750g pumpkin 
250g sweet potato 
250g potato 
2 large onions 
1L veg stock 
1 cup cream 
2 tsp curry powder 
salt & pepper 
 
In large saucepan heat 1-2 tbs oil and fry sliced onions and curry powder. Peel pumpkin and potatoes and cut into small pieces, add all to pot along with stock. 
Bring to boil, reduce heat and simmer, uncovered for 30 minutes or until tender.  
Blend and add cream, salt and pepper to taste and simmer for a further 5 minutes.

Chicken and Corn Soup

2tbs olive oil 
1 med onion, diced 
1 tin corn 
1 med carrot,  diced 
1 large stick celery, diced 
1 med potato, peeled and diced 
1.5L chicken stock 
300gm chicken, cooked and shredded 
1 sml tin creamed corn 
 
Fry onion in oil, over a medium heat until soft.  
Add carrot, celery, potato and stock and bring to the boil.  
Simmer for 20 minutes or until all vegetables are soft. Blend if desired.  
Add cooked chicken and creamed corn and continue to simmer until heated through.
