Soupa Wednesday
Soupa Wednesday is back!!!
Vegie Soup
1kg mixed vegetables, roughly chopped.
(For example we used potato, sweet potato, pumpkin, swede, celery, carrot and silverbeet.)
1 tbs olive oil
1 onion diced
2 cloves garlic crushed
1L vegetable stock
Fry onion and garlic in oil over medium heat until soft.
Add vegetables and stock and bring to the boil.
Simmer for 30 minutes or until vegetables are soft.
Blend until smooth and serve.
Potato and Leek Soup
2 leeks, washed and thinly sliced
4 medium potatoes, peeled and diced
1 garlic clove, crushed
1 brown onion, roughly chopped
1 tbs olive oil
1.25L vegetable stock
100ml cream
Fry onion and garlic in oil over medium heat until soft.
Add leek and potato and continue to cook until leek softens.
Add stock and bring to boil. Reduce heat and simmer for 25 minutes or until potato is soft.
Blend, add cream and serve - with croutons if desired.
